Formulation expertise backed by production experience
Developing gummy candy means connecting texture, flavour and formulation with a workable manufacturing process. At Brix Mühendislik, we combine formulation and process experience to support laboratory samples, pilot trials, improvements to existing lines and industrial scale-up. Our aim is to turn an appealing sample into a product that can be made consistently under actual production conditions.
Experience with starch mogul and starchless lines
For starch mogul lines, we consider the recipe alongside starch conditioning, mould preparation, depositing, curing, moisture transfer, demoulding and surface finishing. Starch moisture, ambient conditions and holding time are assessed in relation to texture and line performance.
For starchless / non-starch lines, we focus on mould type, depositing temperature, viscosity, the setting window, cooling and release from the mould. A recipe that works in starch is not assumed to work unchanged on a starchless line: formulation and process must be adapted together. “Starchless” describes the moulding process here; it does not itself establish a starch-free ingredient claim.
Working with a broad range of hydrocolloids
We work with pectin, gelatin, agar-agar and carrageenan, as well as suitable combinations of hydrocolloids. Depending on the desired texture and process, trials can also include gellan, alginate and supporting thickening systems. Selection takes account of ingredient specifications, pH, soluble solids, ionic balance, thermal history and mouthfeel, rather than dosage alone.
An elastic chew, a shorter bite, a gelatin-free formulation and a different fruit profile call for different development decisions. We assess how sugars, syrups, acids, flavours, colours and functional ingredients interact with the gel system, then verify suitability through trials.
Process support from cooking to packaging
We develop the sequence for hydrocolloid dispersion and hydration, dissolving, cooking or concentration, mixing, acid and sensitive-ingredient addition, deaeration, dosing and depositing. Control points include °Brix, pH, depositing temperature, holding time, piece weight, moisture and water activity. Oiling, polishing, sugar or acid coating and the packaging moisture barrier are considered within shelf-life work.
Improving an existing product or line
Stickiness, sweating, syneresis, crystallisation, weak gels, uneven piece weights, difficult release and storage hardening are investigated through formulation, equipment and environmental conditions together. Equipment selection and line capacity are assessed against the intended product range, cleaning, changeovers and process-control needs.
A project built around practical deliverables
We begin with the target product, reference samples, available equipment, capacity and cost expectations. Within the agreed scope, deliverables can include trial formulations, a process flow, critical monitoring parameters, ingredient requirements and production-trial assessments. Shelf life and scale-up are validated through actual trials; no single temperature, holding time or recipe is presumed to fit every product.
