Food shelf life can be extended by managing raw material quality, product formulation, water activity, pH, microbiological load, packaging structure, processing conditions and storage conditions together.
The appropriate method depends on the product. Shelf-life studies should jointly evaluate heat treatment, water activity control, preservative use, improved packaging barrier properties and cold-chain management.
